Speculoos Butter Cookies

Trader Joe’s cookie butter is probably one of the most delicious things I have ever tried. I had a spoonful and shed tears of joy. And then I had at least ten more spoonfuls before I had to slap myself and stop. It’s a spreadable cookie! Genius.

What is speculoos, you ask? It’s a short bread cookie originating from the Netherlands that’s bursting of cinnamon, brown sugar, and spice . It’s also commonly served on flights, which is where I tasted it for the first time. I was flying Brussels Airline, where they served it as a snack in addition to their surprisingly delicious inflight meal. Speculoos are a far cry from the hardly edible sawdust biscuits served on domestic American flights. Not to get started on a tirade here on inflight meals, but American domestic airlines need to step up their game and serve something more than just shitty pretzels. Even Russian airlines do better than US ones! And that’s just plain embarrassing.

Anyway, this recipe is pretty easy. I looked online at flourless peanut butter cookies and essentially just swapped out the peanut butter for the cookie butter. These aren’t healthy in the slightest. Points for not having flour I guess. Eh, life’s short.

Ingredients:
2/3 cup rolled oats
1 cup cookie butter
1/2 cup white chocolate chips
1 egg
2/3 cup brown sugar
1 tsp vanilla
1 tsp baking powder

1. Preheat the oven to 350 F and grease a cookie sheet to set aside.

2. Mix the oats and baking powder together and set aside.

3. Cream together the cookie butter, vanilla, egg, and brown sugar together until smooth.

4. Mix the wet and dry ingredients together. Fold in the white chocolate chips.

5. Bake for 10 minutes until the edges are golden. Let cool on the pan so that they solidify.
