These were the second batch of cookies that I brought to the cookie exchange, and they went over pretty well. Honestly, gingerbread isn’t my favorite, but it’s a traditional holiday cookie, so I had to oblige. Going with the theme of my blog, I didn’t want a cookie that was laden with butter. So I searched for low fat ginger bread cookies. I found this recipe from Skinny taste, and adapted it slightly.

Fact — these cookies need frosting. Absolutely 100% needs some sort of frosting. On their own, they’re kind of dry, and eating dry cookies is on par with eating sand…with hidden shards of glass. So I made a very simple glaze to add to them. The glaze only adds about 1.5 grams of sugar and 10 calories to the cookies, and they clock in at about 85 calories per cookie.

Ingredients:
3 cups white whole wheat flour
1/2 cup apple sauce
1 egg
1/3 cup + 1 tbs molasses
2/3 cup brown sugar
3 tbs Smart Balance spread
3 tsp ground ginger
1/2 tsp allspice
1/2 tsp ground clover
2 tsp cinnamon
1 tsp vanilla
1 tsp baking soda
Glaze
2/3 cup powdered sugar
almond milk

1. Preheat the oven to 350 F. Grease a cookie sheet and set aside.
2. Beat together the molasses, apple sauce, smart balance spread, and brown sugar. Add in the egg and vanilla, and mix well.
3. In a separate bowl, combine the flour, ginger, allspice, clover, cinnamon, and baking soda. Add the wet ingredients to the dry ingredients and mix well until there are no more flour pockets.
4. Using a rolling pin (or a wine bottle), flatten out the cookies. The dough will be sticky, so be sure to sprinkle your work surface with some flour. Cut out shapes to your hearts desire.
5. Bake for 12-13 minutes.
6. While the cookies are cooling, prepare the glaze. I used 2/3 cups of powdered sugar, and added approximately 1 tbs of almond milk. It depends on how thick or thin you want your glaze, so add a little bit of milk at a time until you get the consistency you want.
7. Once the cookies have cooled, add about 1/2 a spoonful of glaze to each cookie and spread around. Let the glaze set.
